Seriously though, what the fuck is it?

Is it like some ark of the covenant tabernacle thing to them?
It's a meteorite. The moon and other celestial objects were important to pre-Islamic Arabic paganism and Mecca was a pilgrimage site even before Muhammed came on the scene. It kinda makes sense: a lunar calendar is a way more useful way of keeping time in an arid desert than in higher latititudes, where seasons can be tracked by the movement of the sun.

There's a whole explanation in the Quran about how the rock fits into their theology, but you could easily imagine practical reasons for doing so: local Arabs (including Muhammed) would've still grown up around the Ka'aba and valued it. Unlike all the other pagan idols, it was something that could easily be adapted into the new monotheistic religion. That would've help bridge the gap between the old beliefs and the new, and it would've also helped maintain the status (symbolically and economically) of their hometown as an important site for pilgrims.

And how many of those Europeans are worshipped by billions daily, modeling their lives after them?
Speak for yourself. I still scour Saxony every year looking for tree-hugging savages to slay in honor of my nigga Charlie the G.

Is that why they pray at set times so they can use the sun to orientate their mats?
No. Most places where worship is typical has signs pointing to where the Kaaba is. Also it’s the 21st century and they have phone apps that point them to where it is.

What does the sun have to do with it? The sun sets in the West no matter where you are. That has nothing to do with the Kaaba.

I think back in ye olde days they would just broadly use cardinal directions. It's da thought that counts.

There's a story from a Muslim writer visiting the Kingdom of Jerusalem after the Crusaders took it over. He goes to pray somewhere and there's a buncha Templars hanging around. One of them starts saying: "Why are you praying towards the South, stupid? East is that-a-way" trying to help the guy, before one of his buddies pulls him off and apologizes for his friend's poor sense of geography.

If you know which direction the sun is rising and setting you will know which way to face, obviously
No because the Kaaba is in Saudi Arabia. You have to face it to pray. If you lived in South Africa and faced East or West you wouldn’t be looking at it, you’d have to look North.
